A centerpiece roast taken to the next level through 40+ days of dry aging, this Black Angus prime rib delivers deep, concentrated flavor and an ultra-tender bite. Raised in partnership with our eastern Colorado ranchers, these cattle spend their lives on native pasture before being finished in one of two distinct ways — each offering its own character and eating experience.
Grass-Finished:
Bold, earthy, and clean. The natural sweetness of Colorado pasture shines through, with dry aging adding a rich, savory depth and a firm, satisfying texture. $46/lb, dry aged 45 days.
Corn-Finished:
Buttery, tender, and richly marbled. The corn finish brings a rounder, more luxurious flavor that the dry-aging process intensifies into a smooth, steakhouse-style roast. $35/lb
